Mrs Gilbert’s Year 9 food class asked for a recipe they could do at home this week.

This had to be “safe” and include few ingredients, given the current pandemic.

Peppermint Creams was a good choice – enjoyable for all the family to prepare and eat, though not particularly nutritious – remember: “sometimes and in small amounts” 

Keala decided to make the sweet treats (although in class she would normally have her hair tied back, have an apron on and no nail varnish, as per our personal hygiene rules).

Seeing her sparkling work surfaces, it looks like her kitchen hygiene skills are on track, and I am sure there was lots of hand washing occurring.

Peppermint Creams  (Per Bench)

Ingredients

-          1 egg white

-          3 C Icing sugar

-          3 drops peppermint essence

-          2 drops green food colouring

-          125g dark chocolate broken into pieces

Method

1.     Whisk the egg white until soft peak stage

2.     Sieve in the icing sugar, add the colour and flavouring. Mix until combined

3.     Sprinkle icing sugar onto your hands. Roll a teaspoon sized amounts into balls and place on a lined baking tray.

4.     Flatten each ball with a fork to form flat discs. Place in fridge while you prepare the chocolate.

5.     Place chocolate pieces in a heatproof bowl

6.     Place the bowl on a saucepan of simmering water (do not let the water touch the bottom of the bowl).

7.     When the chocolate has melted, remove from the heat and stir until smooth. Allow to cool a little.

8.     Dip each peppermint cream into the chocolate until half covered. Place on baking paper to set.
